The bar, which has been in the planning stages for almost two years, will open above Simeone's Six by Nico venue at 358 Byres Road in Glasgow, housed in the former Fopp record store.
The chef said the concept bar will “offer an immersive experience with food-matching cocktails, with a menu that changes every six weeks.”

Director Simeone said: “Somewhere by Nico is an immersive experience where reality and imagination merge to bring new ideas about what a bar can be like. We take a playful and creative approach to bringing it to life.
“We always take inspiration from the Six by Nico philosophy when creating new experiences, but this one is completely different.
“After 19 months of development, we are excited to see this innovative concept finally take shape and become a reality.”
It goes on to say, “Our drinks are creating new worlds of possibility, and our mixologists, designers, marketing teams and chefs work closely together as storytellers to create new worlds every six weeks.” , Somewhere is more than just a cocktail. Following a six-figure investment, the bar has been completely refurbished and will be open late at weekends.
Non-alcoholic versions of all cocktails on the menu are also offered. Simeone said this change is fundamental to the concept as consumer behavior continues to evolve.
He added: “I have learned many lessons along the way from Six by Nico, particularly in terms of uniqueness and inclusivity in offering vegetarian and vegan tasting experiences.
